Last week Laura + I made pie.
We made a persimmon + apple pie + then shared them with our class last Tuesday.

grace’s carotte {carrot} & courgette {zucchini} bread:
2 1/2 c. all purpose flour
1 c. whole wheat flour {* i used indian whole wheat – atta – flour}
1 T. baking powder
1 t. baking soda
1/2 t. salt
1/2 c. brown sugar
2 eggs
1 1/2 c. buttermilk
2 t. melted butter
1 c. coarsely shredded courgette {zucchini}
1 c. coarsely shredded carottes {carrots}
grated rind of 1 orange & 1 lemon
couple of shakes of cinnamon
preheat oven to 350 degrees. grease 1 loaf pan.
mix together flours, baking powder, soda, salt, pepper, and cinnamon. add remaining ingredients and stir well until everything is well blended. pour into loaf pan and bake for 1 1/4 hours or until cake is firm. cool 5 min. then let cool on a cooling rack.
